Banana Cake


Hi guys!!

What's up?
I am very happy, because it's almost the Easter holidays, yay!
I still have two exams tomorrow (english and history), two on Monday (biology and chemistry) and one on Tuesday, French, but that one's easy-peasy :)
And then, time to chillax, blog, workout, start my youtube channel, go outside, continue writing my book, run, draw, cook & bake, read, and best of all... NO SCHOOL. Aaah, so relaxing :)

But anyways, this blogpost is about banana cake. We made it yesterday and it was heavenly good, I swear. You have to try this one!
We got the recipe from a very nice guy at VeggieWorld.

Here we go!



for 6 people

ingredients

240 gr dates (ideally medjools)
100 gr walnuts
700 gr ripe bananas (weighed without the peel)
200 gr oats
2 tbsp broken flaxseed
4 tbsp grated coconut
half tsp vanilla powder
2 tsp baking soda
2 tsp cinnamon
40 gr cacao nibs


preparation

Cut the dates and soak them in water for 10 minutes. If you use medjools you can leave this step out.
Break the walnuts in little parts.
Cut the bananas in parts.

Put the oven on at 180 degrees Celsius or 356 degrees Fahrenheit.
Mix the bananas, the dates and the oats to a smooth paste.
Add the flaxseed, the grated coconut, the vanilla powder, the baking soda and the cinnamon and stir well.
Add the walnuts and cacao nibs, then stir again.

Put in a cake mold, and then in the oven.
Bake the cake for 35 minutes.
